The sun is finally shining, so it's time to get the rug out! This easy recipe is delicious and nutritious for the whole family. Make in less than 30 mins!
Ingredients (makes 9):
3 eggs100g greek yoghurt
200g smoked salmon, chopped into small pieces
100g frozen peas
100g spinach, roughly chopped
15g fresh dill, chopped
Salt & pepper to taste
50g feta cheese, crumbled
Method:
1. Pre-heat oven to 180 degrees Celcius
2. Beat the eggs, then stir in the yoghurt. If the mixture is very thick add a splash of water or milk.
3. Add the smoked salmon, frozen peas, spinach, dill, salt and pepper and mix
4. Pour the mixture into a greased and lined muffin tray
5. Top with crumbled feta
6. Bake for 20 mins, until golden brown on the top
