The sun is finally shining, so it's time to get the rug out! This easy recipe is delicious and nutritious for the whole family. Make in less than 30 mins!⁠

Ingredients (makes 9):⁠

3 eggs⁠
100g greek yoghurt⁠
200g smoked salmon, chopped into small pieces⁠
100g frozen peas⁠
100g spinach, roughly chopped⁠
15g fresh dill, chopped⁠
Salt & pepper to taste⁠
50g feta cheese, crumbled⁠

Method:⁠

1. Pre-heat oven to 180 degrees Celcius⁠
2. Beat the eggs, then stir in the yoghurt. If the mixture is very thick add a splash of water or milk. ⁠
3. Add the smoked salmon, frozen peas, spinach, dill, salt and pepper and mix⁠
4. Pour the mixture into a greased and lined muffin tray⁠
5. Top with crumbled feta⁠
6. Bake for 20 mins, until golden brown on the top⁠
